Riley full of surprises at Beach bistro Amuse

Former Perigee chef Pat Riley is venturing off the beaten path this month at his new bistro, Amuse.

Riley recently launched the Road Less Travelled menu for his Beach neighbours who are tired of the typical pub fare.

“The average person is way more food savvy. They’re looking for a challenge,” he says.

“We wanted to take a different approach to how we serve the neighbourhood.”

Riley’s approach includes succulent and surprising pairings such as wild boar bacon with coriander pesto and grilled avocado.

He also instituted the “anything can happen table,” where four patrons can pick Riley’s brain and collaborate on their meal three nights a week. Riley jokingly refers to it as the “anti-Perigee table” because it strays from the structure of his former haunt.

“It’s more of an exploration of food,” he says. “We’re always developing new things.”
