Known for their juicy rotisserie chicken and signature ceviches, one of Toronto’s best authentic Peruvian restaurants is having a pop-up on on July 13 from 3 to 8 p.m. Waska Peruvian Chicken, led by chef Elias Salazar, is a contemporary Peruvian establishment offering an array of seasonal dishes that spotlight regional specialties. The one-day only event will take place at 805 Dovercourt Rd. and will have just five delicious options to choose from.

There’s also a crispy chicken sandwich ($10) that comes topped with Bibb lettuce, tomatoes, spicy rocoto pepper mayonnaise and avocado served on a soft Brioche bun.
For dessert, don’t miss the strawberry tres leches cake ($5). A full-service bar curated by The Bedrock will also offer two Pisco-based signature cocktails: the Chicha Sour (purple corn infused) and The Bedrock’s very own Pisco Mule. Other alcoholic beverages like beer, wine, spirits, tequila and mezcal will also be on offer.
“Doing this pop-up is an introduction to Waska Peruvian’s concept,” Salazar says. “This will be an offshoot brand showcasing Peruvian chicken (Pollo a la Brasa).”
Salazar also hinted that he’s opening a brand new location this winter—no word yet on where it will be, but keep an eye on Waska Peruvian’s Instagram for upcoming hints!
