About the Restaurant
Chef Elias Salazar was born and raised in Peru before moving to Toronto to participate in various culinary adventures, including opening his own restaurant and multiple pop-ups before opening Waska Peruvian Chicken. The term "Waska" in Peru is commonly used in Peru to describe someone having a good time, making it a perfect concept for a restaurant. The authentic Peruvian menu comes from the traditional recipes from Salazar's own grandmother, who introduced his passion for the art of cooking. The menu features traditional Peruvian fare including empanadas, ceviches, and rotisserie chicken (called pollo a la brasa). On the side, Waska Peruvian Chicken offers yuca fries, specialty sauces, and a traditional Peruvian purple corn juice.
