With the help of Pizzeria Libretto's Jamie Cook and Max Rimaldi of Tennessee Tavern, van Gameren is most ambitious with this fully plant-based Mexican menu. In the heart of the financial district, Rosalinda's fresh interior is illuminated by natural light and accented with vibrant green furnishings and nods to Mexican culture. Chef de cuisine Matthew Ravenscroft is serving up vegan-friendly dishes like roasted eggplant with sunflower salsa macha, pomegranate and cashew crema and a young coconut ceviche that will win over carnivores and herbivores alike.
