Cabano’s Comfort Food, the Chicago-style restaurant known for no-frills burgers and sandwiches, is opening a new outpost in the Trinity Bellwoods neighbourhood, serving up premium lunch and dinner eats.
The menu will feature the tried-and-true comfort food classics patrons have come to expect at Cabano’s other locations (in Etobicoke, Briar Hill and the downtown core), including fresh, never frozen meat and house-made sauces. In keeping with the quality promise, the menu is small, featuring cheeseburgers, fried chicken sandwiches and chicken wings–all boasting local and fresh ingredients. In the summer months, you can also sweeten your meals with premium soft serve from a local dairy supplier.
Cabano’s is helmed by Chef Kevin Boyd, who has spent the bulk of his career at Chicago’s Michelin Star restaurant, Sepia.
“Our food is timeless with no frills, but prepared with relentless attention to detail,” Boyd, who owns the eatery, says. The secret behind his flavourful, always delicious food? He’s guided by one simple, core principle: cheese on the bottom.
“All of our sandwiches and burgers start with a bun, then a touch of sauce, then cheese before you hit the protein,” says Boyd. “Try it.” It’s the ultimate taste bud experience, he argues, and it makes a big difference.
Although primarily a take-out spot, the new space will have about 15 high tables and bar rails alongside patio space for about 30. It boasts a vibe that’s “industrial, old Toronto” with a few modern touches in a big, bright space.
“Both of Cabano’s brick and mortar locations are in century-old buildings, and this one will be a stunning addition to the street – not obnoxious or out of place, but classy, clean, and technical down to the smallest detail,” says Boyd of the new spot.
As long as timing allows, Boyd is aiming for a mid-April to May 2022 opening. Keep your eyes on the 885 Dundas Street West spot as the weather warms and park hangs become the norm.
