Toronto has its fair share of incredible bakeries and pastry chefs, especially when it comes to cake. From beautiful miniature cakes that are perfect for sharing, to cake ATMs, there’s no shortage of great spots in the city to visit when you’re in the mood for a slice.
Recently, a new cake trend has taken off in Asia that fuses two popular styles. Featuring luscious crepe cake on top and moist chiffon cake on the bottom, the crepe-chiffon hybrid cake craze started in China, after a string of high-profile influencers began posting about it on Little Red Book (a social media platform in China). Now, one local baker is determined to introduce the concept to Torontonians.
Honey Honey Cakery was founded by Yuenting “Bonnie” Fung, a former head baker at Uncle Tetsu Unionville. The bakery closed in 2017 and, in 2021, ownership of the building changed. Fulfilling a lifelong dream, Fung jumped at the new opportunity, and opened Honey Honey Cakery in early December 2021.
The cake shop specializes in crepe cakes, which are typically made using pastry cream made using milk, sugar, eggs, and starch between each delicate layer. But, Fung breaks baking boundaries with her own recipe, which calls for 35% whipping cream, giving the final product a light and airy, almost cloud-like appearance and texture.
Honey Honey Cakery currently has eight crepe cake flavours which include the signature Honey Crepe Cake (made using real Ontario honey), the Pina Colada, the Black Sesame, the Matcha Yuzu, the beautiful baby blue Double Cheese, a stunning lavender-coloured Taro, the Black Chocolate, and the Coconut Latte crepe cake. Can’t decide? Rather than settle on one flavour, the bakery allows customers to combine slices from each flavour into one cake (the 8″ 10-flavour crepe cake currently costs $109).
In celebration of the Lunar New Year and Valentine’s Day, Fung has designed two very special cakes that are only available by pre-order. The Chinese New Year Cake ($78) is a salted egg yolk flavoured crepe-chiffon hybrid cake that comes topped with a miniature fortune wheel game. Best wishes for the new year are also written in icing on top of the cake. The Chinese New Year Cake is available from Feb. 1 to Feb. 28.
The Valentine’s Day cake is made of Nutella crepe cake on top and strawberry chiffon cake on the bottom. The outer layer is covered with cream and nutty Magnum chocolate and for an extra sweet finish, each slice is topped with Ferrero chocolate.
