
Torch is a sushi restaurant that takes traditional sushi styles and combines it with today’s modern styles. The name comes from the Arubi style of flame-searing the top of the fish using a torch to create a charred taste. Torch then combines this technique with the Oshizushi style of pressing the sushi to create unique flavours combining the best of both techniques. These rolls are made using thick-cut fish from local and Japanese sources, and topped with house-made sauces. Best pressed sushi sellers at Torch include the spicy tuna and Fantastic 4, made with fried shrimp, surimi, and tobiko. Also on the menu are rice bowls, sashimi, bentos and a selection of appetizers, including pork gyoza. The sushi can be enjoyed from Torch’s two casual restaurants.
