At Stockyards, they only fire up the smoker Tuesday, Friday and Sunday, so ribs are on offer from 5 p.m. on those days. They sell out around 6:30 p.m., so call at 5 p.m., show up at 5:30 p.m. and take out dinner, because it’s no fun eating at the hectic counter. The ribs are the best in town. Smoked all day over hickory and applewood, they’re vaguely sweet and super-succulent with a light mahogany crust, big and meaty, with no goopy sauce. Fabulous fried chicken is great grease.
