Partners Adam Minster, Adrian Niman, Brent McClenahan and Matt Blondin have completed their renovation of the former Doria space in Rosedale and reopened it as Pantry by the Food Dudes.
It is a takeout-focused operation with a streamlined ordering system. "We think this will be the new age of fast food,” said Minster of the combo-based menu concept that has diners create a meal from a list of proteins and sides.
The former category includes items like brisket, turkey and BBQ chicken that are smoked in the rig they had built after an inspirational trip to Texas. The proteins also cover lighter options like grilled salmon and Minster says: “people in the neighbourhood are ecstatic that there’s a new healthy option."
Sides, ranging from General Tao Brussels sprouts to mac ’n’ cheese, will change more often. Because everything is made in the same production kitchen that supplies the Food Dudes’ catering business, the selection may ebb and flow as they divert ingredients from that part of the operation.
Pantry has space to accommodate 20 diners inside and 28 on their patio, but Minster points out that up to 80% of their business, especially during lunch, is to-go.
