Tucked away at the corner of Portland and Wellington Street West is Marben, one of the city's top purveyors of Canadian comfort. Executive chef Chris Locke takes pub fare to a whole new level while showcasing local, and seasonal ingredients. Sometimes that means going deep into fermentation experiments to deliver clever accents such as kombucha apples or IPA vinegar. Or it means evolving with the times and giving Torontonians exactly what they want to pair their beer with, whether it's a classic Ploughman's Board with house charcuterie and local cheeses, or their vegetarian hen of the woods tempura served with fermented mushroom aioli.
