Elia Herrera, of Top Chef Canada and Los Colibris fame, has opened up LosCo Vegan, a Mexican-inspired vegan restaurant.

Located in Assembly Chef’s Hall, LosCo Vegan draws inspiration from Herrera’s Mexican heritage, using Central American flavours and ingredients, while incorporating new techniques and preparations better suited for plant-based cuisine.
