Renowned Toronto chef Mark McEwan has teamed up with chef Shen Ousmand to create Diwan, a Persian restaurant at the Aga Khan Museum. Step into a gorgeous and ornate dining room adorned with wood panels that were hand-carved and hand-painted in Damascus at the end of the 18th century. The advantages of being in an art museum are literally displayed. Although always serving up dishes influenced by Iranian cuisine, the Diwan menu changes based on what the featured collection currently on display is. Taste your way from sumac to saffron, joojeh (chicken thigh) to koobideh (grilled beef), pomegranate to preserved lemon. Eat chickpeas in their original form, as hummus or as part of a falafel ball.
