New sake brewery to open in Distillery District

Ontario Spring Water Sake Company, Toronto’s first Japanese sake brewery, located at the heart of the Distillery District, is set to open this spring.

The company is developing Junmai (pure sake) and Nama (unpasteurized sake) on par with its Japanese counterparts and is currently refining its brewing techniques before the first batch hits the LCBO and restaurants around the GTA.

“In terms of sake making, it’s not only the rice or yeast or the water differences, but there is a significant involvement of the brewing technique as well,” says Kazuto Hayashi, general manager of Ontario Spring Water Sake Company.

Why in Ontario, Canada’s wine-producing powerhouse? According to Hayashi, Ontario contains quality water sources similar to the ones in Japan. By producing sake with Ontario spring water, the finished product will not only match the traditional Japanese taste, but will also uniquely complement the food in North America.
