Luxury hotel in Yorkville debuts new spot for burgers and champagne

Dรญa restaurant offers a warm, open space for itsย guests to dine from crafted brunch, lunch andย dinner menus, a speciality wine list and a creativeย cocktail menu.

Chef Justin Raponi, Dรญaโ€™s Executive Chef and Lead Culinary Enthusiast, is behind the inventive menu, which highlights his vast experience in Italian cuisine with small plates, Roman-style pizzas, and decadent pastas. Nearly two and a half decades in the hospitality industry has taken Chef Raponi on culinary journeys across the hemisphere. Much of his career, however, has been spent in Torontoโ€™s high-end restaurants, including private golf clubs, Splendido Wine Bar, and Ristorante 101.

At Dรญa, shared plates are a must-try, including the duck confit sliders, pesto ricotta and sliced charcuteries. Lunch and dinner options cover a little bit of everything with the prime rib burger and chicken ras el hanout as heftier plates, while the crunchy thai noodle salad is a lighter fare to pair with a Sainta Margherita pinot grigio.

Located on Canopy Hotel Yorkvilleโ€™s secondย floor, Dรญa Restaurant comes mere months after theย hotelโ€™s arrival, which has been touted as one of Toronto’sย most anticipated luxury hotel openings of the year.

As for drinks, In addition to Dรญaโ€™s signature wine program, the restaurantโ€™s cocktail menu is creative, constantly changing, and as relaxing and refreshing as the space itself. A mezcal-coloda offers an unexpected flavour on a favourite summer drink, while the Rosedale Refresher is an all-new sweet-tooth satisfier that combines gin and chartreuse with pomegranate, raspberry, cucumber, and mint.

Comfy plush seating allows patrons to either sip their cocktails or even work from a cozy area around the warm fireplace or at the floor-to-ceiling windows that overlook a bustling Bloor Street East. Vibrant overhead lighting and sleek white posts shed colour on some of the modern touches of emerald green rugs, gold bar chairs, and grey tabletops.

The laidback, luxe feel of the restaurant mimics the same tone of the boutique hotel. As the first Canopy by Hilton in Canada, the hotelโ€™s design is led by Torontoโ€™s own Studio Munge and highlights its location between the urban landscape of Yorkville and the forested canopy of Rosedale.

Also under Chef Raponiโ€™s leadership, an all-day cafรฉ, Virtu Cafรฉ & Revisions will also be opening soon in the hotel.

Dia is now open at 387 Bloor Street East inside Canopy Hotel.
