Jason Bangerter is enjoying licence to be “a little wacky”.
Foodwise, that is.
Bangerter heads up the culinary side of Luma, the TIFF Bell Lightbox’s new secondfloor restaurant.
After eight years as chef de cuisine at French-inspired eatery Auberge du Pommier, Bangerter says he is enjoying getting to play with Luma’s menu: a touch of Thai here, some spices there and a new, seared-tuna twist on the classic salad niçoise.
Ninety per cent of his ingredients are local, coming from within a 100-mile radius, he says, such as fresh herbs from a farm in Guelph and free-range chicken that might end up smoked on site and sliced into a wrap with mangoes, avocados and chili-lime mayonnaise.
The vibe is “modern casual, fun and funky,” says Bangerter.
