Over the course of COVID-19’s many waves, which forced restaurants closed, Chef Pii Nong spent the quiet time in the kitchen, experimenting with different flavours and creating new dishes. Try the fruits of his lockdown labour, like pandan leaf chicken, marinated chicken wrapped with fresh pandan leaf into a bundle. The dish is then fried to infuse pandan leaf flavor into the chicken and served with sweet chili plum sauce – your taste buds won’t believe you didn’t have to fly to eat food this good.
