Wellington Street’s Marben is aiming to stay ahead of the curve. Earlier this month, the downtown eatery relaunched with a decor facelift and a menu revamp.
A new cocktail program put together by Dan Gütter, Marben’s general manager and beverage director, includes decadent picks like the Soft ‘n’ Sloe ($15). Two gins (No. 3 and Hayman’s Sloe) are paired with Edmond Briottet rose liqueur, rhubarb done three ways (a puree, a syrup and a juice), and Dillon’s lemon bitters.
The beverage is finished with a lavender-lemon foam that’s whipped up out of lemon juice, lavender bitters, egg white and maple syrup. Served in a rocks glass over ice, this fancy tipple captures the essence of spring.
