Chef Tip: an easier way to peel beets

When fall rolls around, root vegetables like beets are a hearty seasonal favourite. Roasting beets is one of the best ways to bring out their natural sweetness, but there is an added benefit to cooking them this way. 

Beets can be tricky to peel without staining your hands or making your kitchen look like a crime scene. So instead of peeling them beforehand, Chef Geoff Hopgood of Hopgood's Foodliner peels his beets after roasting them. He wraps them in foil, which helps steam them. As the beets cook, they pop out of their skin, decreasing the labour of peeling them yourself.
