Drink This: the namesake mojito from Valdez

A couple of weeks ago, Valdez, Toronto’s latest Latin street food purveyor, opened shop on King West. Stepping into the former Cheval space, this highly anticipated eatery comes tricked out with an open kitchen, eye-catching murals and a soon-to-open rooftop patio to boot.

Chef Steve Gonzalez — recognized for his stint on Top Chef Canada — turns out grub like yucca fritta, pupusas and adobo pork from the kitchen. Oh, and there’s a tres leches (three milks) dessert too.

Meanwhile, behind the bar, Jorge Yarce (Gusto 101) injects both classic and nouveau cocktails with a Latino twist. The namesake Mojito Valdez ($9) features rum dolled up with a mix of cilantro and mint, while Mexico’s Jarritos lime soda is the final summery touch.

Stay tuned for trashy ’80s-style blended drinks in the near future. We hear they’re making a comeback.
