Award-winning T.O eatery launches ‘Fat Bao’ with chefs Eva Chin and Trevor Lui

Simpl Things, Toronto’s hip day-to-night venue in Parkdale, is kicking off 2024 with a shakeup to their current evening menu concept. This news follows a successful 2023, where Simpl Things earned recognition as Canada’s 31st Best Bar and a spot in Air Canada Enroute’s list of Canada’s Best New Restaurants.

Evelyn Chick’s vision for Simpl Things is all about offering a ‘second home’ experience.

“As we welcome the new year, we’re thrilled to present a fresh menu from ‘Fat Bao,’ curated by Chef Eva Chin and Trevor Lui. We’re merging nostalgia with innovation, inviting guests to make Simpl Things their second home,” says Chick.

During the day, Simpl Things, led by Chef Cody Wilkes, offers a menu of Italian comfort food, including freshly kneaded bread, small bites with local and seasonal ingredients and  fresh pastas. The venue continues to serve from 11 a.m. to 5 p.m. on weekdays and starts brunch at 10 a.m. on weekends.

As night falls, the restaurant transforms into Fat Bao, a Neo-Chinese cocktail and snack bar. Chef Eva Chin and Trevor Lui bring a menu featuring inventive, cocktail-friendly Asian snacks. Think Beef Carpaccio, Sesame Shrimp Toast, Shanghai Noodles, and a Smoked Salmon Tower — all crafted to pair perfectly with Simpl Things’ diverse cocktail list.

There are also a bunch of  new cocktail additions, including  Matcha Calling, Killa Beez Knees, and Sonic Boom. Non-alcoholic options are inclusive with a Zero Proof list.
